Piave cheese
A hard, cooked-curd cow's-milk cheese from the mountain territory of Belluno, sold at five ages that each get their own name. It shrinks as it ages, from 320 mm across at Fresco to 280 mm at Vecchio Selezione Oro, and concentrates as it goes.

Where it is made
The mountain territory of the province of Belluno.
How it is made
Milk is collected in the Belluno mountains and made into cheese in plants inside that same territory. Fresco is aged 20 to 60 days at about 6.8 kg; Mezzano 60 to 180 days at 6.6 kg; Vecchio over 6 months at 6.0 kg; Vecchio Selezione Oro over 12 months.
