Casatella Trevigiana
A young, soft cow's-milk cheese from the Treviso countryside, milk-white to cream, glossy and melting in the mouth, with little or no rind. The disciplinare is explicit that it is not a spreadable or high-cream cheese, despite the texture.

How it is made
Cylindrical, in a large format of 1.8 to 2.2 kg and a small one of 0.20 to 0.70 kg. Moisture 53 to 60 per cent, fat 18 to 28 per cent as sold, protein above 12 per cent. The smell is faint, milky and fresh; the taste sweet with a slight acid seam.
