Aged Asiago

Habit still runs the plateau: driving across it you pull over for the cattle, Bruna or Grigia Alpina or Rendena, going up to the pastures or coming down. More than 70 mountain dairies are still working in the Sette Comuni, but only a few make the aged Asiago, and among them about a thousand wheels a year. It smells of cut grass, then ripe fruit, then musk, and the flavour is uncommonly layered.
