Madonie Manna
The sweet sap bled from ash trees (Fraxinus ornus and F. angustifolia). Thousands of hectares once carried them across north-western Sicily; roughly 250 hectares remain around Pollina and Castelbuono. The steep, marginal ground has never suited mechanisation, which is part of why the practice survived at all.
