Spans six regions of central Italy: Abruzzo, Lazio, Marche, Toscana, Umbria and Emilia-Romagna.
How it is made
Grading follows the EU carcass classification tables: light lambs in fat classes 1 to 3, heavy lambs in conformation classes U, R and O with fat classes 2 to 4, castrati in conformation classes E, U and R.
