Siena ricciarelli
Soft almond biscuits of almonds, sugars and egg white, baked to a cracked, sugar-dusted top. Each is an ovalised lozenge of 10 to 30 g, 50 to 105 mm on the long diagonal, 30 to 65 mm on the short and 13 to 20 mm thick.
