Chioggia radicchio
The round radicchio: rounded leaf blades wrapped tightly into a spherical head, red of varying intensity with white central ribs. Made in an early and a late type, both from wild-variety Cichorium intybus.

Where it is made
Chioggia and the surrounding lagoon farmland, provinces of Venezia, Padova and Rovigo.
How it is made
The early type must show a well-closed head with the root cut cleanly below the collar. The late type follows it through the colder months.
