Bassano white asparagus
White asparagus spears grown from the local Comune, or Chiaro, di Bassano ecotype. Spears must be white, straight, whole and tightly closed at the tip, never hollow, split, peeled or broken.

How it is made
A faint pink blush and light rust marks are tolerated on the bracts and the base so long as they stay off the top 3 cm, can be removed by ordinary peeling, and affect no more than a tenth of the bundle.
