White asparagus from the Piave gravels around Cimadolmo, grown from a named cultivar list headed by Precoce d'Argenteuil, with Larac, Dariana, Cumulus, Darbella, Vittorio, Voltaire and Zeno; other cultivars may make up at most a fifth of a planting.

How it is made
Spears must be wholly white, entire, fresh in look and smell, sound, free of rodent or insect damage and bruising, clean, and dry enough after any washing or chilling.
