Aglio Bianco Polesano DOP
Polesine white garlic
Garlic from the Polesine, the low ground between the Adige and the Po, with a bulb of uniform brilliant white and no coloured striping at all. It is round and compact, slightly flattened where the roots go in, and its narrow lance-shaped leaves are green-blue.

How it is made
Grown from local ecotypes and from the Avorio variety. The cloves sit perfectly adjacent to one another in a compact head with a characteristic outward curve, their tunics pink to varying intensity on the concave face and white on the convex.
