Bologna potato
A single-variety DOP: only Primura qualifies. The tuber is oval-elongated and regular, with firm flesh from white to straw-yellow and a smooth, characteristically pale skin that comes from the soils it grows in.

How it is made
Plants must show restrained vegetative growth, procumbent stems of normal thickness, large light-green leaves and medium flowering. A moderate dry-matter content and firm flesh, not floury, make it suit frying, steaming and roasting alike.
