Modena sour cherry preserve
A sour-cherry conserve, soft-set and a deep red-brown with darker glints, balanced between sweet and sharp. Minimum 60 per cent sugar, refractive index 60 to 68 brix, and a pH held between 2.5 and 3.5 to keep the characteristic tartness.
