Lusia lettuce
Lettuce from the sandy Adige soils around Lusia, in two varieties: Cappuccia (Lactuca sativa capitata) and Gentile (crispa). The stem is short, at most 6 cm, and very fleshy, and the head is notably light for its size.

How it is made
Defining qualities are lightness of head, softness with no fibre, turgidity that holds 10 to 12 hours after cutting, and no lignification. Greenhouse plants are more compact with a slightly more open heart than field-grown ones.
