Borgotaro porcini
Wild porcini gathered in the chestnut and beech woods of the upper Taro valley, and the first mushroom anywhere in Europe to be given a protected designation. It covers the fruiting bodies of four Boletus species, each with its own local name, picked from spontaneous growth only.

Where it is made
The upper Taro and Ceno valleys straddling the Emilia-Romagna and Tuscany border: Parma province and Massa-Carrara.
How it is made
No cultivation: the designation covers only carpophores of Boletus growing wild in the defined zone. Boletus aestivalis, known locally as the rosso or fungo del caldo, comes first in the season with a dry, downy, red-brown cap; the other admitted species follow it through the summer and autumn.
