Fagiolo Quarantino di Volturara Irpina
Volturara Irpina Quarantino Bean

A white bean, tender and slightly floury, grown on the Irpinian plateau below Monte Terminio. It is called Quarantino for the forty days it takes to mature: small, irregular, with a thin ash-white skin, and now grown without poles.
