Roman Conciato

Despite the name it goes back to the Samnites, and many consider it the oldest cheese in Italy. Cow's, sheep's and goat's milk are curdled with kid rennet, hand-pressed, salted and dried, then conciate, dressed, one method being a wash in the water pasta has been cooked in.
