Cilento Cacioricotta

A goat cheese of the Cilento, home of the local Cilentana breed. The grazing is Mediterranean macchia, shrub and tussock grass, and that shows in the cheese's aromatic complexity. The name comes from the unusual curdling technique, which sits between a cacio and a ricotta.
