Stuffed pig's trotter
The Modena Christmas dish: a boned front trotter stuffed with a seasoned mix of pork meat, rind and fat, then either sold fresh for long boiling or pre-cooked and sterilised in its pack. Cotechino Modena is the same filling in a plain casing rather than the trotter.

Where it is made
The whole territory of 22 provinces across Emilia-Romagna, Lombardia and Veneto, from Piacenza to Rovigo.
How it is made
Sold fresh, it is dried in a warm-air chamber; sold cooked, it is generally pre-boiled, sealed in hermetic containers and heat-treated in an autoclave at a minimum of 115 °C for long enough to make it shelf-stable.
