A dry-farmed tomato of the upper Belìci valley, grown for passata rather than for the table. No family in inland Sicily would once go into winter without a stock of it, put up alone or with the rest of the village.

How it is made
The tomatoes are worked at the height of summer, cooked straight after picking, then spread on cannizze, boards woven from reeds, covered with a cloth and set out in the sun.
