Polizzi Generosa Pepper

Polizzi Generosa is a stone village of barely 3,000 people and more than 40 churches, on a ridge in the middle of the Madonie, and it keeps its food as it keeps its palaces: Badda beans, hazelnuts, and the pepper the dialect calls pipiddu. Small and roughly conical, bright green turning red, and odd in that it grows upward, the pod standing above the leaves instead of hanging below. Its history is oral only: the seasonal hazelnut pickers were apparently paid partly in bread topped with olives, pecorino and roast pipiddu.

How it is made
It takes patience. Every plant has to be staked or the weight of the fruit bends it over. Sown in April, planted out between late May and June, flowering from July to October, and picked in stages.
