Prato mortadella
Not the Bologna kind: a pink-red cooked pork sausage flavoured with sea salt, garlic, spices and, distinctively, alchermes liqueur at 0.3 to 0.6 per cent, which gives it its colour and its faintly sweet, spiced edge.
