Small dark lentils long grown on Ustica's volcanic ground, by a method that has not really changed and is almost entirely manual.

How it is made
Sown in January and cut with sickles in the first half of June, once the plants have dried, then stacked in sheaves and threshed. Until a few years ago mules still dragged big stones over the sheaves on the threshing floor; the straw was then thrown up with wooden forks, again and again, until the wind had taken it all away from the lentils.
