A broad bean known since antiquity and once widespread as a rotation crop with wheat, sown to put nitrogen back into the soil. It remains a fixture of the local cooking, and the whole cultivation is still done by hand.

How it is made

The rows are prepared in November and December and the seeds sown in small clusters, a postarella, then covered. Once the plants wilt they are cut, dried in small bundles called manate di favi, and beaten in the yard, where animals once trod them.
