Fagiolo Badda di Polizzi
Polizzi Generosa Badda Bean
Two centuries in the kitchen gardens of Polizzi Generosa, up in the Madonie park. Badda is dialect for ball, and the bean is round, medium-small, ivory blotched either pinkish-orange or a purple so dark it reads black. It tastes green, almost briny, faintly astringent, and finishes on chestnut and almond.

How it is made
Green pods for eating fresh come from August, about 60 days after sowing, and depending on altitude can run to November; beans for drying are taken in October and November, before the pods open and drop the seed.
