Cipolla di Giarratana
Giarratana onion
A very large, remarkably sweet onion from the Iblei mountains. The bulb is slightly flattened with brownish-white skin and white flesh that carries flavour without pungency. They usually weigh around 500 g and can reach two kilos.

How it is made
After lifting, the bulbs are left to dry in the field for a week, then stored somewhere dry and airy.
