History
Paolo Vodopivec, whose family has long farmed the rocky Carso, began serious estate production with his brother Valter in 1997. Trained near Josko Gravner, he devotes every vine to a single grape, Vitovska, fermenting on the skins in buried Georgian amphorae with no temperature control, added yeast, sulphur or filtration, making some of Italy's most singular skin-contact whites.
