A hard, semi-fat raw-milk cheese from the Val Camonica and the Sebino, made year round and aged a minimum of 100 days. The name is the local word for the room the wheels mature in.

The Val Camonica and Lake Iseo, province of Brescia.

How it is made

Cylindrical, 34 to 40 cm across, 8 to 10 cm deep, weighing 10 to 16 kg, with a natural rind. A tolerance of up to 10 per cent applies to the minimum weight of an individual wheel.
