An alpine cow's-milk cheese from the Valtellina, made in the high summer pastures and aged long. Its zone is written not as a province but as a set of alpeggi, the named summer grazings themselves.

How it is made
Made exclusively from whole raw cow's milk. The zone is the whole province of Sondrio plus the alpeggi of eight Alta Valle Brembana comuni in Bergamo, and the Varrone, Artino and Lareggio pastures in Introbio and Premana, province of Lecco.
