Salva Cremasco
A washed-rind soft table cheese of raw curd from the Crema plain, made from whole cow's milk and aged over 75 days. Its name comes from salvare, to save: it was the way to keep a spring milk glut from going to waste.

The Crema area and the western Lombard plain.
How it is made
Square-faced parallelepiped, either 11 to 13 cm or 17 to 19 cm a side, 9 to 15 cm or 9 to 12 cm deep, weighing 1.3 to 1.9 kg or 3 to 5 kg.
