Torre Guaceto Fiaschetto Tomato

Small, sweet, juicy and made for preserving: this was the base of the passata every household in this part of the Brindisino put up for winter, town families included, and using any other tomato, San Marzano included, was not considered. It still nearly disappeared, being expensive to grow and worse to pick, with yields no match for the modern sauce hybrids.
