Altino Sweet Pepper

Altino sits on a rocky spur over the Aventino valley and gives its name to small horn-shaped peppers, bright red, called a cocce capammonte, head up, because the fruit points skyward.

How it is made
Picked ripe and threaded on a needle into a long chain, the crollo, then air-dried for several days and either toasted a few minutes in the oven or dipped quickly in hot oil, after which they are crumbled over pasta, salt cod, vegetables or pork. Dried, they are also ground in the mortars called piloni into a sweet powder used in sauces and to season cured meats, ventricina vastese among them.
