Valtellina pizzoccheri
Buckwheat pasta from the Valtellina, sold both dry and fresh, cooked with cabbage or chard, potato and mountain cheese. Three shapes are recognised: flat tagliatella, rolled tagliatello, and a concave gnocchetto.
