Pane di Saragolla del Beneventano

Bread from Saragolla, an heirloom durum wheat still grown inland in the Sannio. It reached Italy from the Middle East around 400 AD with arrivals from what is now Bulgaria, and the name comes from that language: sarga for seed and golyo for yellow.
