History
The Castello della Sala was built in 1350 by Angelo Monaldeschi della Vipera and became a commercial wine estate only in the 20th century.
In 1940 it was bought by Marchese Niccolò Antinori.
From 1979 the agronomist Renzo Cotarella developed an age-worthy white; the 1985 vintage produced the first true Cervaro della Sala, among the first Italian whites with malolactic fermentation and barrique ageing.
The estate also makes the botrytised Muffato della Sala.
