Stef Yim, trained as a sommelier and winemaker in California and France, founded Sciara at Randazzo in 2015 to make high-altitude Etna wines.
From alberello vines up to some 980 meters he makes the Etna Rosso, bottled by altitude such as 760 and 980 meters.
