History

The Skerlj family has long farmed the karst at Sales (Salež) near Trieste, developing an agriturismo in the 1990s.

Siblings Matej and Kristina Skerlj craft their interpretation of the Carso from about three hectares of micro-parcels.

Grapes ferment spontaneously on the skins and age two years in oak in a cellar carved from the karst rock; the Vitovska Kamen, aged in Aurisina stone, has been made since 2018.
