Asprinio
Also known as Asprino, Asprinio bianco.
Asprinio is a white wine grape of the agro aversano, the plain straddling the provinces of Caserta and Naples around the town of Aversa. Its name comes from the sharp, 'aspro' (tart) acidity of its wines. It is famously grown in the 'alberata aversana', a heritage training system in which the vines are married to tall poplar trees and worked from long ladders, a landscape recognized as a cultural asset of the zone.
Asprinio produces very high-acid, light-bodied dry whites of pale straw-yellow color with a fresh, citrus and green-apple character, long used as a base for sparkling wine. Its minimum total acidity in the Aversa denomination is among the highest in Italy, 6 g/l for the still wine and 7 g/l for the spumante.
